It is our passion to develop and encourage our staff to work hard towards qualifications. Over the past 12 months we have worked alongside East Berkshire College with two apprentice chefs, Louis Graham and Connor Malins.
This month saw the big re-launch of East Berkshire College’s Hospitality department which invited the local apprentices to join in some healthy competition with one another. Both Connor and Louis made the final cook off to cook for Michelin starred chef Tom Kerridge and pâtissier Will Torrent.
Connor came out with a brilliant dish of fillet of beef with a rosti, wilted spinach and honeyed carrots which wowed the judges, and Louis impressed with a dish of Lamb rump with red pepper purée, Aubergine caviar and pomme maxine.
The Judges took their time, but after what seemed forever Connor came out as the Winner. He had brilliant feedback from the judges saying that his sauce was the real highlight of his dish.
Connor puts his win down to great training and support provided within the kitchen team at the hotel and the support that has been given by the tutors at East Berkshire College to learn in a ‘real life’ kitchen.
